Avocado Basil Pasta

INGREDIENTS:

For Pasta
- 50g Crave Green Multi-Millet
- 1L Water
- A generous amount of salt

For Sauce
- 1 medium Avocado
- 1/2 cup Basil
- 3-4 Cloves of Garlic
- 1 tbsp nutritional yeast, 1/2 tbsp Olive Oil
- Juice of half a Lemon
- 1/2 Cup reserved Pasta Water

For Seasoning (To Taste)
- Salt
- Black Pepper
- Chilli Flakes
- Oregano
STEPS TO PREPARE PASTA:
- Boil 50gm Multi-Millet Pasta in boiling water for 8-10 mins. (Reserve some pasta water to add extra flavor to your sauce)
- Meanwhile, in a blender, blend 1 medium avocado, 1/2 cup basil, 3-4 cloves of garlic, 1 tbsp nutritional yeast, 1/2 tbsp olive oil, juice of half a lemon, and 1/2 cup pasta water until smooth.
- Transfer the blended puree to a pan and cook on low flame.
- Add salt, oregano, black pepper and chilli flakes into it. Stir well for 1-2 minutes.
- Add the boiled pasta to the pan and toss to coat it evenly in the creamy green sauce. Cook for an additional minute to allow the flavors to meld.
- Serve hot, garnished with chili flakes or fresh herbs like parsley or basil, if desired.
