Basil Pesto Pasta

INGREDIENTS:

For Pasta
- 50g Crave Green Chickpea Pasta
- 1L Water
- A generous amount of salt

For Sauce
- 1 Cup Fresh Basil (Washed)
- 15g Roasted Walnuts
- 2-3 Cloves of Garlic
- 1 tbsp Olive Oil
- 4-5 Roasted Black Peppercorns
- A Splash of Reserved Pasta Water
- 2 tbsp Parmesan Cheese
- Salt
- Chilli Flakes
- Oregano
STEPS TO PREPARE PASTA:
- Boil 50g Chickpea Pasta in generously salted boiling water for 8-10 minutes. (Reserve some pasta water to adjust sauce consistency.)
- In a blender, blend together 1 cup fresh basil, 15g roasted walnuts, 2-3 cloves of garlic, 1 tbsp olive oil, 4-5 roasted black peppercorns, a splash of pasta water, and 1 tbsp parmesan cheese until smooth.
- Transfer the blended puree to a pan and heat it on low flame.
- Add salt, oregano, and chili flakes. Stir well and let it cook for 1-2 minutes.
- Add the boiled pasta to the pan and toss to coat it evenly in the pesto sauce. Cook for an additional minute to meld flavors.
- Serve hot, topped with grated parmesan cheese.
