Basil Pesto Pasta

INGREDIENTS:

  • For Pasta
  • For Sauce
    • 1 Cup Fresh Basil (Washed)
    • 15g Roasted Walnuts
    • 2-3 Cloves of Garlic
    • 1 tbsp Olive Oil
    • 4-5 Roasted Black Peppercorns
    • A Splash of Reserved Pasta Water
    • 2 tbsp Parmesan Cheese
    For Seasoning (To Taste)
    • Salt
    • Chilli Flakes
    • Oregano

 

STEPS TO PREPARE PASTA:

 

  1. Boil 50g Chickpea Pasta in generously salted boiling water for 8-10 minutes. (Reserve some pasta water to adjust sauce consistency.)
  2. In a blender, blend together 1 cup fresh basil, 15g roasted walnuts, 2-3 cloves of garlic, 1 tbsp olive oil, 4-5 roasted black peppercorns, a splash of pasta water, and 1 tbsp parmesan cheese until smooth.
  3. Transfer the blended puree to a pan and heat it on low flame.
  4. Add salt, oregano, and chili flakes. Stir well and let it cook for 1-2 minutes.
  5. Add the boiled pasta to the pan and toss to coat it evenly in the pesto sauce. Cook for an additional minute to meld flavors.
  6. Serve hot, topped with grated parmesan cheese.
