Broccoli Pasta

INGREDIENTS:

  • For Pasta
  • For Sauce
    • 1 small Broccoli (chopped into florets)
    • 1/2 tbsp olive oil
    • 2-3 cloves of garlic (chopped)
    • 1/2 cup of cherry tomatoes (halved)
    • Reserved broccoli boiling water 
    • 1 tbsp Nutritional Yeast
    • 1 tbsp cheese
  • For Seasoning
    • Salt
    • Black Pepper
    • Chilli Flakes
    • Oregano

 

STEPS TO PREPARE PASTA:

 

  1. Boil the Chickpea pasta according to the package. 
  2. Chop the broccoli into small florets and boil them in salted water for about 5 minutes or until tender. Reserve some of this broccoli boiling water (~¼ cup) and set broccoli aside.
  3. In a pan, heat ½ tbsp olive oil over medium heat. Add chopped garlic and sauté for 30 seconds until fragrant. Then add cherry tomatoes and cook until they’re blistered and soft.
  4. Add the boiled broccoli and reserved broccoli water into the pan. Cook everything together, pressing the broccoli down with the spatula until it becomes soft and slightly mashed, forming a rustic sauce.
  5. Season with salt, black pepper, chilli flakes, and oregano. Stir well and let it cook for 1 minute and add nutritional yeast into it.
  6. Toss in the cooked pasta, stir well in the sauce and serve hot, topped with grated cheese.
