Cauliflower Alfredo


Serving size: 1 Person

 

INGREDIENTS:

  • For Pasta
  • For Sauce
    • 50g Cauliflower
    • 20g Cashews
    • 2 Cloves of Garlic
    • 1/4 Cup Milk
    • 1/2 Medium Onion
    • 1 tbsp Nutritional Yeast
    • 1 tsp Lemon Juice
    • A Splash of Reserved Pasta Water
    For Seasoning (To Taste)
    • Salt
    • Chilli Flakes
    • Oregano

 

STEPS TO PREPARE PASTA:

  1. Boil 50g Chickpea Pasta in generously salted boiling water for 8-10 minutes. Reserve some pasta water for the sauce.
  2. Simultaneously, boil 50g cauliflower and 20g cashews until soft. 
  3. In a blender, blend the boiled cauliflower and cashews along with, 2 cloves of garlic, 1/4 cup milk, 1 tsp lemon juice, and 1 tbsp nutritional yeast into a smooth puree.
  4. In a pan, sauté 1/2 medium onion until golden brown.
  5. Add the blended sauce to the pan and cook for 2 minutes, adjusting consistency with pasta water if needed.
  6. Season with salt, oregano, black pepper, and chili flakes to taste.
  7. Toss in the 50g boiled pasta and mix well to coat evenly in the creamy sauce!
