Cauliflower Alfredo

INGREDIENTS:

For Pasta
- 50g Crave Green Chickpea Pasta
- 1L Water
- A generous amount of salt

For Sauce
- 50g Cauliflower
- 20g Cashews
- 2 Cloves of Garlic
- 1/4 Cup Milk
- 1/2 Medium Onion
- 1 tbsp Nutritional Yeast
- 1 tsp Lemon Juice
- A Splash of Reserved Pasta Water
- Salt
- Chilli Flakes
- Oregano
- 50g Cauliflower
STEPS TO PREPARE PASTA:
- Boil 50g Chickpea Pasta in generously salted boiling water for 8-10 minutes. Reserve some pasta water for the sauce.
- Simultaneously, boil 50g cauliflower and 20g cashews until soft.
- In a blender, blend the boiled cauliflower and cashews along with, 2 cloves of garlic, 1/4 cup milk, 1 tsp lemon juice, and 1 tbsp nutritional yeast into a smooth puree.
- In a pan, sauté 1/2 medium onion until golden brown.
- Add the blended sauce to the pan and cook for 2 minutes, adjusting consistency with pasta water if needed.
- Season with salt, oregano, black pepper, and chili flakes to taste.
- Toss in the 50g boiled pasta and mix well to coat evenly in the creamy sauce!
