Classic Arrabbiata

INGREDIENTS:

For Pasta
- 100g Crave Green Chickpea Pasta
- 1L Water
- A generous amount of salt

For Sauce
- 1 tbsp Extra Virgin Olive Oil
- 3-4 cloves Garlic, finely chopped
- 1 small Onion, finely chopped
- 60g Cherry Tomatoes
- 140g Regular Tomatoes

For Seasoning (To Taste)
- Salt
- Black Pepper
- Chilli Flakes
- Oregano
STEPS TO PREPARE PASTA:
- Boil 100g chickpea pasta in generously salted water for 8–10 minutes. Reserve some pasta water for the sauce.
- In a pan, heat 1 tbsp extra virgin olive oil and saute finely chopped garlic and onion until golden brown.
- Add 60g cherry tomatoes and 140g chopped regular tomatoes to the pan. Pour in a generous splash of pasta water and season with salt. Let it simmer on low heat for 6-7 minutes until tomatoes soften and turn into a chunky sauce.
- You can choose to blend the tomato mixture for a smooth paste or keep it classic in the arrabbiata style.
- Add oregano, chilli flakes and black pepper to taste. Stir well and cook for another minute.
- Add the boiled pasta and toss it well.
- Top it with parsley and cheese and mix well.
- Serve hot, topped with more parsley and cheese, if desired.
