Classic Arrabbiata


Serving size: 1 Person

 

INGREDIENTS:

  • For Pasta
  • For Sauce
    • 1 tbsp Extra Virgin Olive Oil
    • 3-4 cloves Garlic, finely chopped
    • 1 small Onion, finely chopped
    • 60g Cherry Tomatoes
    • 140g Regular Tomatoes 
  • For Seasoning (To Taste)
    • Salt
    • Black Pepper
    • Chilli Flakes
    • Oregano

 

STEPS TO PREPARE PASTA:

 

  1. Boil 100g chickpea pasta in generously salted water for 8–10 minutes. Reserve some pasta water for the sauce.
  2. In a pan, heat 1 tbsp extra virgin olive oil and saute finely chopped garlic and onion until golden brown.
  3. Add 60g cherry tomatoes and 140g chopped  regular tomatoes to the pan. Pour in a generous splash of pasta water and season with salt. Let it simmer on low heat for 6-7 minutes until tomatoes soften and turn into a chunky sauce.
  4. You can choose to blend the tomato mixture for a smooth paste or keep it classic in the arrabbiata style.
  5. Add oregano, chilli flakes and black pepper to taste. Stir well and cook for another minute.
  6. Add the boiled pasta and toss it well. 
  7. Top it with parsley and cheese and mix well.
  8. Serve hot, topped with more parsley and cheese, if desired.
