Feta Tomato Pasta

INGREDIENTS:

For Pasta
- 50g Crave Green Chickpea Pasta
- 1L Water
- A generous amount of salt

For Sauce
- 25g Feta Cheese
- 1 Medium Tomato
- 1/2 Onion
- 1/2 Cup Cherry Tomato
- 3 Cloves of Garlic
- A Few Basil Leaves
- 1 tbsp Olive Oil
- Salt
- Black Pepper
- Chilli Flakes
- Oregano
- 25g Feta Cheese
STEPS TO PREPARE PASTA:
- Boil 50g Chickpea Pasta in generously salted boiling water for 8-10 minutes. (Reserve some pasta water if needed.)
- Preheat the oven to 180°C.
- Coat a baking tray with 1/2 tbsp olive oil. Place 25g feta cheese, 1/2 cup cherry tomatoes, 1 tomato, 1/2 onion, 3 cloves of garlic, and a few basil leaves on it.
- Brush the ingredients with more olive oil and sprinkle with salt and pepper.
- Bake for 30 minutes at 180°C or until the tomatoes and feta are properly cooked.
- Transfer the roasted ingredients to a blender and blend into a smooth puree.
- In a pan, cook the blended sauce on low flame for 1-2 minutes, adding chili flakes, oregano, and salt.
- Toss in the boiled pasta and coat it well in the sauce.
- Serve hot, garnished with additional chili flakes or fresh basil if desired.
