Feta Tomato Pasta

INGREDIENTS:

  • For Pasta
  • For Sauce
    • 25g Feta Cheese
    • 1 Medium Tomato
    • 1/2 Onion
    • 1/2 Cup Cherry Tomato
    • 3 Cloves of Garlic
    • A Few Basil Leaves
    • 1 tbsp Olive Oil
    For Seasoning (To Taste)
    • Salt
    • Black Pepper
    • Chilli Flakes
    • Oregano

 

STEPS TO PREPARE PASTA:

 

  1. Boil 50g Chickpea Pasta in generously salted boiling water for 8-10 minutes. (Reserve some pasta water if needed.)
  2. Preheat the oven to 180°C.
  3. Coat a baking tray with 1/2 tbsp olive oil. Place 25g feta cheese, 1/2 cup cherry tomatoes, 1 tomato, 1/2 onion, 3 cloves of garlic, and a few basil leaves on it.
  4. Brush the ingredients with more olive oil and sprinkle with salt and pepper.
  5. Bake for 30 minutes at 180°C or until the tomatoes and feta are properly cooked.
  6. Transfer the roasted ingredients to a blender and blend into a smooth puree.
  7. In a pan, cook the blended sauce on low flame for 1-2 minutes, adding chili flakes, oregano, and salt.
  8. Toss in the boiled pasta and coat it well in the sauce.
  9. Serve hot, garnished with additional chili flakes or fresh basil if desired.
