Peas and Paneer Pasta

INGREDIENTS:

For Pasta
- 50g Crave Green Multi-Millet
- 1L Water
- A generous amount of salt

For Sauce
- 40g Peas
- 40g Paneer (Tofu for vegan option)
- 1/2 tbsp Oil
- 3-4 Cloves of Garlic

For Seasoning (To Taste)
- Salt
- Black Pepper
- Chilli Flakes
- Oregano
STEPS TO PREPARE PASTA:
- Boil 50gm Multi-Millet Pasta in boiling water for 8-10 mins. (Reserve some pasta water to add extra flavor to your sauce)
- Meanwhile, in a blender, blend 40g peas, 40g paneer/tofu, 1/2 tbsp olive oil, 1/4 tsp salt. Add pasta water to it to adjust consistency.
- In a pan, heat some oil, add oregano and chilli flakes into it to infuse flavor.
- After a few seconds, add the blended sauce and cook to eliminate the rawness of peas.
- Add salt, pepper, and chili flakes. Mix well and let it simmer for 2-3 minutes.
- Add the boiled pasta to the pan and toss to coat it evenly in the creamy green sauce. Cook for an additional minute to allow the flavors to meld.
- Serve hot, garnished with chili flakes or fresh herbs like parsley or basil, if desired.
