Peas and Paneer Pasta

INGREDIENTS:

  • For Pasta
  • For Sauce
    • 40g Peas
    • 40g Paneer (Tofu for vegan option)
    • 1/2 tbsp Oil
    • 3-4 Cloves of Garlic
  • For Seasoning (To Taste)
    • Salt
    • Black Pepper
    • Chilli Flakes
    • Oregano

 

STEPS TO PREPARE PASTA:

 

  1. Boil 50gm Multi-Millet Pasta in boiling water for 8-10 mins. (Reserve some pasta water to add extra flavor to your sauce)
  2. Meanwhile, in a blender, blend 40g peas, 40g paneer/tofu, 1/2 tbsp olive oil, 1/4 tsp salt. Add pasta water to it to adjust consistency.
  3. In a pan, heat some oil, add oregano and chilli flakes into it to infuse flavor.
  4. After a few seconds, add the blended sauce and cook to eliminate the rawness of peas. 
  5. Add salt, pepper, and chili flakes. Mix well and let it simmer for 2-3 minutes.
  6. Add the boiled pasta to the pan and toss to coat it evenly in the creamy green sauce. Cook for an additional minute to allow the flavors to meld.
  7. Serve hot, garnished with chili flakes or fresh herbs like parsley or basil, if desired.
