Sweet Potato Pasta

INGREDIENTS:

For Pasta
- 50g Crave Green Chickpea Pasta
- 1L Water
- A generous amount of salt

For Sauce
- 1/2 Medium Sweet Potato
- 1/2 Cup Milk (Any type)
- 1/2 tbsp Oil
- 1/4 Cup Yogurt
- 2 tbsp Nutritional Yeast
- 2 Cloves of Garlic

For Seasoning (To Taste)
- Salt
- Black Pepper
- Chilli Flakes
- Oregano
STEPS TO PREPARE PASTA:
- Boil the Chickpea pasta according to the package. (Reserve pasta water to add to sauce later.)
- Microwave the sweet potato for 10 minutes or until it becomes soft. Let it cool slightly, then peel off the skin.
- In a blender, combine the cooked sweet potato, milk, oil, yogurt, nutritional yeast, and garlic. Blend until smooth and creamy.
- Heat 1 tbsp oil in a pan over medium heat. Add the blended purée, reserved pasta water, salt, pepper, and chili flakes. Mix well and let it simmer for 2-3 minutes.
- Add the boiled chickpea pasta to the pan and toss to coat it evenly in the creamy sauce. Cook for an additional 2-3 minutes to allow the flavors to meld.
- Serve hot, garnished with chili flakes or fresh herbs like parsley or basil, if desired.
