Sweet Potato Pasta

INGREDIENTS:

  • For Pasta
  • For Sauce
    • 1/2 Medium Sweet Potato
    • 1/2 Cup Milk (Any type)
    • 1/2 tbsp Oil
    • 1/4 Cup Yogurt
    • 2 tbsp Nutritional Yeast
    • 2 Cloves of Garlic
  • For Seasoning (To Taste)
    • Salt
    • Black Pepper
    • Chilli Flakes
    • Oregano

 

STEPS TO PREPARE PASTA:

 

  1. Boil the Chickpea pasta according to the package. (Reserve pasta water to add to sauce later.)
  2. Microwave the sweet potato for 10 minutes or until it becomes soft. Let it cool slightly, then peel off the skin.
  3. In a blender, combine the cooked sweet potato, milk, oil, yogurt, nutritional yeast, and garlic. Blend until smooth and creamy.
  4. Heat 1 tbsp oil in a pan over medium heat. Add the blended purée, reserved pasta water, salt, pepper, and chili flakes. Mix well and let it simmer for 2-3 minutes.
  5. Add the boiled chickpea pasta to the pan and toss to coat it evenly in the creamy sauce. Cook for an additional 2-3 minutes to allow the flavors to meld.
  6. Serve hot, garnished with chili flakes or fresh herbs like parsley or basil, if desired.
