Zesty Zucchini Pasta


Serving size: 1 Person

 

INGREDIENTS:

  • For Pasta
  • For Sauce
    • 1/2 tbsp Olive Oil or Avocado Oil
    • 3–4 cloves Garlic, chopped
    • 1 Zucchini, chopped
    • 20g Cashews
    • 1 cup Fresh Basil Leaves
    • 1/4 tbsp Lemon Juice
    • Pasta Water (as needed)
    • 1/3 cup Cherry Tomatoes
    • 1/2 tbsp Nutritional Yeast
    • Parmesan or Shredded Cheese (optional)

 

  • For Seasoning (To Taste)
    • Salt
    • Black Pepper
    • Chilli Flakes
    • Oregano

 

STEPS TO PREPARE PASTA:

 

 1. Boil 100g chickpea pasta on a generously salted water for 10-12 minutes. Reserve pasta water and keep it aside.

2. In a pan, heat 1/2 tbsp of oil of choice. Saute 3-4 roughly chopped garlic and 1 whole chopped zucchini until soft.

3. Transfer this to a blender, along with, 20g cashews, 1 cup fresh basil, 1/4 tbsp lemon juice and plenty of pasta water to make a smooth and creamy sauce. Keep it aside.

4. In a pan saute a few cherry tomatoes until soft and blistered and add in the blended sauce.

5. Stir in salt, black pepper, chilli flakes, oregano, and 1/2 tbsp nutritional yeast. Mix well.

6. Add the boiled pasta and toss until evenly coated. Let it simmer for a minute or two.

7. Serve hot, topped with shredded cheese or parmesan (optional), and garnish with fresh basil and roasted cherry tomatoes.
